Homemade Cajun Breakfast Sausage

1.5 lbs ground sausage (chicken sausage or lean pork). Pre seasoned country sausage works fine too.
1 tsp chili flakes
Fresh thyme 2 tsp fresh leaves only or 1/2 tsp to 1 tsp dried thyme
1 tsp onion powder
1/2 tsp each paprika and cayenne

  • Place ground sausage in large bowl. Make sure it’s chilled. Add your additional spices and herbs. Mix together with hands. Add Tabasco sauce or omit for less spicy option.
  • Shape into patties about 3 to 3 1/2 in width and 1 to 1.5 inch thick. They will shrink when cooked or air fried .
  • Place patties on baking tray lined with parchment paper to keep from sticking.
