Peach Cobbler Bread

3 cups Bob’s Red Mill Organic All Purpose Flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 cup oil
4 eggs
1 1/2 teaspoons vanilla extract
3 (15 oz) cans peach chunks, well drained
1 cup powdered sugar

  • In the bowl of a stand mixer, combine flour, sugar, salt, and baking soda.
  • While on low speed, add in oil, eggs, and vanilla. Gently stir in drained peaches with a wooden spoon.
  • Divide batter evenly between two well greased loaf pans. Bake at 350 degrees for 50 – 65 minutes or until a cake tester comes out almost clean. Cool completely on wire racks.
